I got in a baking mood today. For some reason, it seemed like fun. I am still working on making yeast rolls but I thought that I would share what I have made so far.
I made corn bread muffins to go with dinner tonight. I going to freeze part of them and keep some for the chili that I am making this weekend. I especially like this corn bread recipe.
Also I have made some Gluten Free Chcolate Cupcakes for my son. This my first time making this recipe. Of course, I can't serve them without taste tasting them! The cupcakes are really good.
Baking days are great for getting ahead on your meals. I feel like I accomplished so much!

It is awesome that you can freeze stuff isn't it? I tried freezing cupcakes not long ago and they kept so well, I was surprised!
It was a wonderful day for baking! I ended up doing some honey rolls and a chocolate cake - yum!
