What's For Dinner: Thai Chicken Lettuce Wraps

My kids are a little picky when it comes to vegetables. They like some vegetables but they tend to like different vegetables. I am always looking for great recipes that sneak in some of the veggies.

My family had Thai Chicken Lettuce Wraps at a restaurant. Everyone loved it. I looked up some recipes online and changed them to fit our taste. It is a fairly cheap recipe once you buy the initial ingredients. Then the next time, you will only need to buy the chicken, lettuce, and slaw. It is very filling!

Ingredients:
1 head of iceberg lettuce
3 boneless chicken breasts - chopped up
2 Tbsp vegetable oil
3 gloves of garlic or 1 1/2 tsp minced garlic
2 Tbsp oyster sauce
4 Tbsp lime juice
4 Tbsp soy sauce
1 cup Broccoli Slaw
1 bell pepper sliced thin

Take the head of lettuce and remove the stem part. Pull the lettuce apart into leaves. Rinse with water and pat dry.

Heat a large skillet over high heat. Add the vegetable oil and then the chicken. Cook for about 3 minutes stirring constantly. Then add in all the other ingredients and cook for about 2 minutes while stirring. Pour into a bowl.

To assemble the wraps, take a lettuce leaf and place 1 to 2 tablespoons of filling in the center and wrap it up.
