Mini Bacon Cheeseburger Cookies & AMEX Winner

I hope that everyone has had fun making their 6 ingredient or less desserts as part of the American Express Blue cards promotion of Blue Cash Dinner @6 Giveaway. I have just had so much fun! There were so many great entries into the giveaway that I wish I could choose more than one. I decided to use the random number generator to pick the winner. I am going to keep you in suspense while I talk about my last 6 ingredient or less dessert recipe.

Mini Bacon Cheeseburger Cookies



These are great little treats that kids really love making in the kitchen. They are perfect for taking to a summer potluck or for school parties.



Ingredients:
Box of Vanilla wafers
Box of Grasshopper cookies
Vanilla frosting
Food coloring
Coconut
Wildfire or strawberry fruit roll-ups

First, put 1/4 cup coconut in a sandwich bag. Add several drops pf green food coloring and mix it together. Continue to add drops of green food coloring until the coconut turns green. Next, mix some frosting and yellow food coloring together in a small bowl. This will be your cheese and will help hold the bacon cheeseburger together.

Take a vanilla wafer and dab a small amount of white frosting on the flat side. Place a chocolate-covered cookie, face up, on top of the white frosting on the wafer. Press the chocolate-covered cookie down slightly so it'll stick to the frosting. Then take a few shredded strips of fruit roll up and place them on top of the chocolate cookie. Make sure that the fruit roll up extends over the edge of the chocolate cookie. Next place a large dollop of yellow frosting on top of the fruit rool-up. Then sprinkle on some green coconut. Now take a new vanilla wafer cookie and press down gently on top of the coconut and yellow frosting. Press enough so it stays together and so it looks like cheese is oozing out of the bun.

Now it looks just like a mini bacon cheeseburger!
